AMARELLI

The company ---------- produces licorice from ------ to -------------------------- in a territory that has always been suited to the cultivation, harvesting and transformation of licorice root.

 

The last witness of an ante litteram industrial district that counted more than 80 companies, in three centuries it has managed to conquer the taste of millions of consumers and is now present in the best stores, in over 27 countries. A perfect mix of innovation and tradition, the new plants are still located in the old eighteenth-century ashlar, open every day to the many visitors to the liquorice museum.

LICORICE DOP

The ------- ---------- epresents excellence in terms of quality and authenticity. It is produced in compliance with the conditions and requirements established in the PDO Production Regulations, using only Glychirrhiza glabra roots that grow spontaneously in the fertile lands of Calabria. The root, once harvested, is transported to the -----------------------, plant, where it is sent to the subsequent processing stages.

FROM ROOT TO LICORICE

The root used to make the product contained in this box was harvested on ---------, and subsequently delivered to the factory on ----------.

 

Here the roots were stored for the time necessary to allow the execution of the chemical analyses, which took place on  day -------------, in order to guarantee the compliance of the raw material with the --------------------- procedures.

THE PROCESSING: FIRST PHASE

The transformation of the root into licorice started from the cutting of the root, using a special root-shredding machine, a process that took place on --------, and was sent to the subsequent extraction phase with water at high temperature and high pressure.

The resulting licorice juice has undergone two stages of concentration, until it reaches the consistency of a thick paste.

THE PROCESSING: SECOND PHASE

The still hot and malleable licorice paste was transferred to the extruder department on ------------- to then be processed in the extrusion refiner mixer. The extruded pasta has traveled on conveyor belts to allow it to cool.

 

After that it passed to the cutter equipped with rollers and gears in order to obtain the shape of the desired product.

 

The opaque extruded product underwent an initial drying phase, followed by a "polishing" phase with jets of water vapor to give the licorice a shiny and finally dried appearance.

THE PACKAGING

The Amarelli style is recognizable for the excellence of the product and for the attention to design.

All the licorices are enclosed in colorful packages and iconic boxes that reproduce ancient images taken from the House archives and new original and unique designs created for Amarelli.

The elegant tin boxes, from the legendary "Rossa", to the nice "Nanetti", to the unmistakable "Black Label", in fact recall the ancient labels of the company, the Heritage style adds to the practicality of a pocket-sized, resealable, durable and recyclable.

These characteristics make them suitable for multiple reuses, to the full advantage of care for the environment which has always been a priority for Amarelli.
